Ingredients

For the Pizza Dough

- 2 1/4 cups (300g) all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon active dry yeast
- 1 tablespoon olive oil
- 3/4 cup (180ml) warm water

For the Filling

- 1 cup (225g) shredded mozzarella cheese
- 1/2 cup (50g) sliced pepperoni
- 1/4 cup (60ml) pizza sauce or marinara sauce
- 1/4 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Olive oil, for brushing

Recipe

  1. In a mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
  1. In a large bowl, whisk together flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.
  1. Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape the dough into a ball and place it in an oiled bowl. Cover with a kitchen towel and let it rise in a warm place for 1-1.5 hours until doubled in size.
  1. Preheat your wood-fired oven to about 475°F (245°C) with a pizza stone placed on the lowest rack, allowing it to preheat for at least 30 minutes.
  1. Punch down the risen dough and divide it into two equal portions. Roll out each portion into a circle, about 10-12 inches in diameter.
  1. Place half of the shredded mozzarella cheese on one half of each dough circle, leaving a border around the edge.
  1. Top the cheese with sliced pepperoni, spreading it evenly.
  1. Spoon pizza sauce over the pepperoni, then sprinkle with dried oregano and crushed red pepper flakes, if desired.
  1. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
  1. Crimp the edges of the calzone with a fork to ensure they are well sealed.
  1. Brush the top of each calzone with olive oil.
  1. Carefully transfer the calzones to the preheated pizza stone in the wood-fired oven.
  1. Bake for 12-15 minutes, or until the calzones are golden brown and crispy.
  1. Once cooked, remove the calzones from the oven and let them cool for a few minutes before slicing.
