Ingredients
For the Pizza Dough
- 2 1/4 cups (300g) all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon active dry yeast
- 1 tablespoon olive oil
- 3/4 cup (180ml) warm water
For the Filling
- 1 cup (225g) shredded mozzarella cheese
- 1/2 cup (50g) sliced pepperoni
- 1/4 cup (60ml) pizza sauce or marinara sauce
- 1/4 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Olive oil, for brushing
Recipe
- In a mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
- In a large bowl, whisk together flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape the dough into a ball and place it in an oiled bowl. Cover with a kitchen towel and let it rise in a warm place for 1-1.5 hours until doubled in size.
- Preheat your wood-fired oven to about 475°F (245°C) with a pizza stone placed on the lowest rack, allowing it to preheat for at least 30 minutes.
- Punch down the risen dough and divide it into two equal portions. Roll out each portion into a circle, about 10-12 inches in diameter.
- Place half of the shredded mozzarella cheese on one half of each dough circle, leaving a border around the edge.
- Top the cheese with sliced pepperoni, spreading it evenly.
- Spoon pizza sauce over the pepperoni, then sprinkle with dried oregano and crushed red pepper flakes, if desired.
- Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
- Crimp the edges of the calzone with a fork to ensure they are well sealed.
- Brush the top of each calzone with olive oil.
- Carefully transfer the calzones to the preheated pizza stone in the wood-fired oven.
- Bake for 12-15 minutes, or until the calzones are golden brown and crispy.
- Once cooked, remove the calzones from the oven and let them cool for a few minutes before slicing.
